Fake It!

We had an awesome Fourth of July cookout with the neighbors! Just wanted to share this recipe with you...it was a hit and one I'll be making again! I think I'll double it next time and try to find a bigger container...or just make two! Might also try substituting some different kinds of candy bars. Almost as good as a Carvel cake but less expensive and almost "made from scratch!" Here's the recipe!

Easy Ice Cream Cake

1 cup heavy cream
2 tablespoons confectioners' sugar
8 ice cream sandwiches (3.5 ounces each)
2 1.5-ounce candy bars or 1/2 cup chocolate chips, chopped

Line an 8 1/2-by-4 1/2-inch loaf pan with a piece of wax paper or parchment, allowing the paper to hang over both long sides. In a large bowl, beat the cream and sugar until stiff peaks form. In the bottom of the pan, arrange 3 of the sandwiches in a single layer, cutting them to fit as necessary. Spread with half the whipped cream. Repeat with the remaining sandwiches and whipped cream. Sprinkle the top of the cake with the chopped candy bar. Cover with plastic wrap and freeze until firm, at least 1 hour and up to 1 week. Holding both sides of the paper overhang, lift the cake out of the pan and transfer to a platter. Discard the paper, slice the cake, and serve.
Yield: Makes 6 servings

We've been away at Myrtle Beach this past week, so I couldn't get online.

You mentioned your struggle to find a new church. LifePoint is part of the Willow Creek Associaton. Our Ventureland program is a Willow Creek program. Have you tried checking Willow Creek's website? It is
www.willowcreek.org
Click Willow Creek Association and then click find a church. If you enter in your state, you can pull up a list of all churches that are part of their assoc. It could be a starting point.

When we moved to MD, we felt the same way as you. We missed our old church terribly. Our Pastor in Seattle emailed us a couple of churches to try. We tried a few. We found LifePoint because our house was being built right behind LHS. When we first tried it I didn't want to go back to LifePoint (then called Carroll Community) because it seemed way too big. Our kids LOVED it though, so we returned.

One of the first people we met was Kevin Lawyer & he and Suzie introduced us to so many people and really got us connected. About a year later, we went back to Seattle for vacation and went to our old church....guess what? We found that we missed LifePoint! It was then that we finally felt like LifePoint was our church home.

Yikes! I'm sure there are NO calories in this, right? I've made something close to this but not quite. We'll be trying this at our house, for sure!! Miss yoU!

I use cool whip and it makes it even easier to whip up. Miss you girl.
